This recipe came from the Kitchen Aid booklet that was stuffed in the ‘Pasta Sheet and Pasta Cutter Attachments’ Box. Some minor modifications were made – but great pasta was to be had. We used our stand mixer to make the dough, roll it, and cut out spaghetti.
5 medium eggs
1 tablespoon water
3 1/2 cups of unbleached white all purpose flour
1/2 teaspoon salt
Place ingredients in bowl, attach flat beater, turn to speed 2 and mix 30 seconds. Remove the flat beater and attach the dough hook. Turn to speed 2 and knead for two minutes. Hand-knead dough for one to two minutes. Let rest for 20 minutes. Divide dough into 4 pieces before processing with Pasta Sheet Roller attachment.
I like ANY recipe where I can use my kitchenaid! 🙂 I have the 6qt and I LOVE it.
